Spicy Apple Muffins
These moreish muffins from my harvest recipe collection make great use of the far from humble homegrown apple and freeze well. Ingredients: 1 cup quick oats 1 ½ cups SR flour ¾ cup brown sugar 2 tsp mixed spice 2 tsp cinnamon ½ tsp ground cloves ½ tsp baking soda ½ tsp salt 75ml sunflower oil or similar 1 egg 1 cup processed preserved apple ½ cup Greek or dessert style yogurt ¼ to ½ cup milk Method: Pre-heat fan-forced oven to 200 degrees. Combine dry ingredients in a large bowl, mixing well. In a separate bowl, combine liquid ingredients (reserve ¼ cup of milk), mixing well. Make well in centre of dry ingredients, add liquid mixture, and fold to combine (don’t over-mix). Add extra milk if needed. Spoon mixture into non-stick muffin tray and bake for 12-15 minutes until golden. Leave for a few minutes before removing from tray and sitting on drying rack. Makes 12 |
